Grown by Nonesuch Oyster Farm is located within a preserve at the confluence of the Nonesuch and Scarborough River at Nonesuch Point in Scarborough, Maine. The site is sandy, shallow, and right next door to one of Maine largest salt marshes. This variety Nonesuch is grown in floating bags at the surface of the river.

Technique: Floating Bags and crates come winter. Harvested at 18-24 plus months

Appearance: Tan and purple shells with mossy green colored patches . 

Flavor: A prominent dash of brine and sweetness with distinct notes of seagrass
